Chicken Pot Pie....kind of :)
YAY for comfort food!!!  This recipe takes a bit of prep work...but it's worth it.  Promise!  You'll actually learn how to make homemade biscuits in this one too!

First..the biscuit dough! You'll need..
2 cups of all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1 whole stick of COLD butter...UNSALTED..VERY important that it's UNSALTED and COLD! Cut into thin slices.
3/4 cup of cold milk

In a bowl..with a hand mixer, combine all dry ingredients with your thinly sliced butter.  Mix until it sort of balls up like little peas.  Add milk....and mix until it's dough!  Sit aside :)

Now..for the filling part...you'll need..
1 lb of boneless chicken breast.  I like the little strips.
1 teaspoon of garlic powder
1 teaspoon of salt
2 bags of FROZEN veggie mix (carrots, peas, green beans and lima beans..sold in bags for $1.00 at save a lot.  I do not recommend using canned veggies...because ..well..I think it tastes bad. :) )
1 bag of powdered pepper gravy mix.  4.5 oz bag.  If you want you can make your own roux...this is just easier for me.
2 cups of water

Preheat over to 325.  Grease a 9x9 casserole dish and sit it aside.

Brown chicken in skillet...shred it ...add frozen veggies....heat them till their heated through....add gravy mix and 2 cups of water.  Continue to heat until the gravy is more like gravy and has coated chicken and veggies.  Add them to the 9x9 casserole dish.   Pat out biscuit dough....now...you can roll them out and make them all pretty.  I don't....I eye ball it.  They taste just as good. Lay them on top of the filling.  Bake for 8-10 minutes or until tops of biscuits are golden brown.  Remove from oven and allow to sit for 10 minutes until you serve.  ENJOY.
